Should steamed bread be steamed with cold water or hot water?

Steamed steamed bread is usually boiled in cold water.

When we make steamed bread, we usually ferment it. If it is fermented steamed bread, we can cook it with hot water. If the steamed bread is not fully fermented, it should be cooked with cold water. Because the temperature of cold water gradually rises during the heating process, it will take some time to boil, which is beneficial to the further fermentation of steamed bread and avoids the drying, sagging or hardening of steamed bread. If steamed and fermented with cold water, steamed bread will collapse or crack under the action of temperature and water vapor.

Note, however, that when we cook steamed bread with cold water, we should first wake the steamed bread for a while, and then put the cold water into the pot, so that the steam coming out slowly can further help the steamed bread to ferment. If you put boiling water into the pot, it will be scalded to death by hot steam at once, and the steamed bread is hard and unpalatable.
