What's the secret of making coffee taste better?

Why raise beans to wake them up?

Coffee beans will produce a large amount of carbon dioxide (CO2) and remain in it during roasting. A large amount of exhaust will appear in the first few days after roasting, and the exhaust will slow down with the passage of time. At this time, the fineness and cleanliness of the brewed coffee aroma are not its best state, because these CO2 will hinder the extraction of coffee flavor and soluble substances during the extraction process, resulting in uneven and unstable extraction. Raising or waking beans is to make the coffee extracted from coffee beans more soft, full and layered.

What's the difference between raising beans and waking up?

The main purpose is the same, in order to discharge CO2 as soon as possible and achieve better flavor display, but "bean cultivation" is to completely seal the coffee beans and let them stand in the packaging bag, while "wake up the beans" usually needs to pour the coffee beans into the bean bin of the bean mill, which is often more commonly used in cafes. Because of the supply cycle of coffee beans, it is necessary to adjust the state of coffee beans by awakening occasionally, so drinking at home is not so serious.

What will happen to your coffee without beans?

(1) coffee oil caking; (2) It is not easy to blend with milk.

③ It is easy to smell smoke; ④ It leads to insufficient flavor extraction.

How to raise beans to wake up and how to grasp the time?

There is no absolute standard answer. Generally speaking, the best flavor of beans will be displayed about 5-25 days after baking. You can refer to the suggested time provided by the cooked bean baker. Different coffee beans, different roasting degrees, different roasting machines and other factors will affect the time that beans need to be raised (a table of reference values is made for everyone according to different roasting degrees for reference only)
