Ma Cai in hometown
In winter, my relatives in my hometown in the countryside brought me some hemp vegetables from my hometown. I was beaming when I saw these familiar hemp dishes. I quickly took some photos and sent them to WeChat. One is to be happy, the other is to show off. This immediately attracted the attention of friends in my hometown and all walks of life. Many people who live and work outside like me ask me for hemp vegetables and give me guidance on how to cook with hemp vegetables.
Ma Cai is a hometown dish, commonly known as Chang Huang Cai. Named for its length and yellowish color. It is also a submerged dish. We call it Ma Cai, which is made of stone. In winter, Chinese cabbage is harvested from crops, picked back, picked out, washed with clear water one by one, then cooked in a boiling hot pot, that is, covered and taken out to dry in the open air for a period of time. When cabbage is completely cooled, the water absorbed on it is cold. Find a vat, sprinkle some salt on the bottom of the vat, put some pepper, and then put it in the open air. Put some peppers and a layer of Chinese cabbage, such as peppers and Chinese cabbage. When the jar is full, or the prepared Chinese cabbage is finished, press one or two or three big stones on it and cover the jar, so you don't have to worry about it. After a month, remove the lid, remove the stone and take it out to eat. Of course, you can eat it after you take it out.
The taste of hemp is a kind of hemp, but it is not as direct as pepper. It just tastes a little sour. This taste is more like hometown, homesickness and homesickness.
Ma Cai is generally used for cooking and can also make various dishes. The pressed hemp vegetables can be chopped with a knife and can be directly used for cooking or fried in a pot, so that the dishes made are more delicious. Ma Cai, which can also be added when pouring water, is also a kind of sauerkraut. Then when eating rice, stir-fry the hemp vegetables into vegetables and eat them next. When frying pickles, you don't need to add anything else, just add some seasoning, and you can also fry them with tofu, which tastes different. Cut the tofu into small pieces, cut into small squares as big as fingers, fry the tofu for a while first, and then add the hemp vegetables to fry together, and it is a dish. This is delicious, too
I remember eating few vegetables in winter when I was a child. One winter, even in spring, we were still eating hemp vegetables, which became a home-cooked dish in rural areas and was even more essential. Every family has hemp vegetables. On one occasion, some of our friends ate potato bumps made of hemp vegetables. As soon as we met, we knew that there were hemp dishes in each other's rice and a very naughty little friend. Is your prostitute delicious? This is also a curse. "Prostitute's mausoleum" means "marry Han". Because "prostitute ling" and "long yellow dish" are homonyms, people say that the nickname of hemp dish is "long yellow dish" for fun, so it is called "prostitute ling"
Now I often live in the city and seldom eat hemp food in my hometown. Sometimes I want to eat, but I can't. Few people in rural areas are pressing hemp grain. The people's lives are good, and it is even more troublesome to suppress hemp grain. In this way, with the progress of the times and the improvement of social living standards, rural people are no longer single, but still hemp food, and the number of people pressing hemp food is gradually decreasing.
This time coincides with the temple fair in the ancient city of Wuzhai, our hometown. More than 30 people went to collect wind at the weekend. At noon, a meal of pockmarked noodles was specially arranged for us. At first, many people didn't know what this meal was, and thought it was pasta. In fact, this is not the same as the pulp surface. Slurry rice can't be mixed with vinegar, and hemp noodles can be mixed with vinegar or eaten with paste, according to everyone's taste. A photographer put a drop of vinegar in a bowl, and the result was: "delicious, the taste is really extraordinary." As a result, others also tried to eat with vinegar. It seems that these city dwellers regard pockmarked noodles as a feature, as a foreign body and as their food.
In fact, the pockmarked noodles are only in Wuzhai, which faces Shaanxi across the Weihe River, and this bowl of noodles in winter is not only the face of life, but also a delicious meal.
Although I am far away from my hometown now, I can still have a meal made of hemp from time to time. The smell and taste are not delicious, but the affection, taste and delicacy of hometown.
Ma Cai is not a single life, but a complex, a tradition and folk custom in my hometown. Eating hemp vegetables in winter, I feel the sour taste in my mouth and the taste of happiness in life.
