The practice of cotton candy

One: Materials

20g of cold boiled water, honey 100g, 7g of gelatin powder, 4 teaspoons of salt1/,5g of vanilla wine, appropriate amount of corn flour and appropriate amount of chocolate sauce.

1 Prepare a baking tray, fill it with a thick layer of corn flour, and press out a round pit with eggs. Prepare a deeper basin, pour 20cc of cold water into the gelatine powder, and stir it slightly to make the powder mix evenly.

2. Put honey, salt and the remaining 20cc of cold boiled water into a pot, heat it to boiling with medium fire, and continue to cook for 5 minutes until the temperature reaches110℃ ~115℃. Slowly add the honey syrup into the bowl of gelatine powder, and at the same time beat it into coarse bubbles with electric egg beater at low speed.

Turn to 3 medium speed and continue to beat honey syrup for about 8 minutes. You can already see obvious lines. Add vanilla wine and stir well, about 8~9 minutes. The sugar coating is thick, and you can draw obvious 8-character marks.

4 Divide the beaten honey cream into small portions, add monascus powder to make it pink, put it in a flower squeezing bag, cut a small hole in the corner and squeeze out the honey cream. Squeeze the white icing into the pit, put the baking tray in the freezer for 2~3 minutes to make the icing slightly hard, and then start squeezing the pink icing on the surface.
