Considering that you are using fixed focus and the distance from the subject is not fixed, you can walk around according to the needs of shooting.

Camera equipment: Generally, the aperture will be set after F8. You can lock the shutter in about 125/ s- 160 seconds. The rest can be determined according to your light source. The lower the ISO, the better. If this setting is too dark, you can add ISO (but not more than 400) or add one or two exposure compensations. Or add an aperture (i.e. F7. 1).

Lighting: Very reasonable, usually one on the left and one on the right. Considering that you have three light sources, you can use one as a background light, which will have shadows and can also be used as a floor lamp.
