One morning a week ago, I first came to Nanshan Village. This mountain village with more than 360 families is built on the mountain, and a cement road with a length of about 1 km winds from the village head to the village end. Along the cement road, you can see rows of wooden frames in front of people's houses on both sides, and the villagers are busy drying noodles in and out. Under the strong sunlight, the cable surface hanging on the high wooden frame looks like a silver line at close range and becomes an elegant waterfall at a distance. What is even more amazing is the looming figure of men and women behind the slender silver line, which makes people fall into a dream. When I was immersed in the beautiful scenery in front of me and was amazed, the villagers told me that it was not the most beautiful time in Nanshan Village. Because there are not many people who cook noodles in hot weather, after the Millennium season, when the weather turns cold, every household will do it. At that time, all the open spaces in the village were drying noodles, and the scene was spectacular!
The cable surface processing in Nanshan Village is manual from beginning to end, which is time-consuming and laborious. However, it is this pure handwork that ensures the quality of noodles in Nanshan Village. It's hot in summer, and noodles will be too sour to eat after a long time. There are generally four procedures for making noodles: mixing noodles, mixing flour with proper amount of salt and water, and kneading thoroughly; Kneading: Knead the thoroughly kneaded dough embryo into a long noodle rope slightly thinner than the little finger and put it in a wooden basin; Roll-up: wrap the noodle rope left for one or two hours on a bamboo stick about 50 cm long, put it in a long wooden cabinet, and then stretch it to 20 cm or 30 cm in the wooden cabinet; Sun drying: Take out the noodles that have been "awake" for several hours in the wooden cabinet, put them in the wooden frame outside the house, stretch them and dry them. The key technology of making cable surface is to control the amount of salt. Salt is mainly used to adjust the elasticity of noodles, and the amount of salt depends on the temperature. Generally speaking, if the amount of salt is controlled accurately, the flexibility of the cable surface will be good, not only will it not break during drawing, but also the taste will be good. Suomian is a specialty of Fuzhou, handmade. There are two kinds of finished products: one is "noodle head", which is slightly thicker and is usually used for frying food; One is the "face tail", that is, the cable surface in Fuzhou people's usual sense, with a diameter of less than 0.6 mm.
The length of Fuzhou cable surface can reach several meters, and the diameter is only 0.6 to 0.7 mm. When I was in Lamian Noodles, I tied a red line on the surface. Because the cable noodles are the longest noodles, they are also called "long noodles" and "longevity noodles". Because of the homonym of "long face" and "long life" in Fuzhou dialect, Fuzhou people also call it "long life"

Noodles also have the following nicknames: birthday noodles, which are the staple food for women during childbirth and confinement; birthday noodles with egg wine and chicken soup; wedding and engagement noodles, which are called "happy noodles"; cooking noodles when going out or not at home, which is called "peace" and praying for peace.
Noodles production in Fuzhou began in the Southern Song Dynasty and has a long history of more than 800 years. The plane cross section of Fuzhou cable is circular, with fineness of 0.7 mm and length of about 3.5 meters.
