How to make red bean toast?

You can use your favorite toast recipe at will, and here you use your favorite Hokkaido toast. As a result, the formula with super high calorie but full milk flavor came. Mix raw dough with matcha powder and wrap it tightly with red beans to create a perfect duo ~

Matcha red bean heart-shaped toast?

Composition:

270g of high-gluten flour, 30g of low-gluten flour, 5g of dry yeast, 40g of fine sugar, 5g of salt, 80g of milk powder15g, 80g of chocolate cream, 300ml of milk100ml, 35ml of whole egg liquid, 5g of matcha powder10g and a proper amount of honey red beans.

① Prepare all ingredients and weigh them separately for later use.

(2) According to the order of bottom liquid, medium powder and top dry yeast, mix all ingredients except matcha powder and honey red beans evenly.

(3) Knead the dough to a complete stage, that is, a large piece of tough film can be pulled out, and the punctured edge is in a neat state (the chef kneads for 20 minutes), and then half of the dough is added with 10g matcha powder and kneaded evenly.

(4) Knead the dough, put it in a warm and humid place (covered with a wet cloth) and ferment it to twice the original volume at one time.

⑤ Knead the fermented dough (fingers touching flour will rebound slowly without shrinking) on the panel for several times and exhaust.

⑥ Roll out the original dough first, and then the matcha dough is half the size of the original dough. The dough should be overlapped and compacted, and there should be no extra dry powder in the middle.

⑦ Spread a proper amount of red beans, and leave a small part on the left and right sides for kneading.

8 Roll forward, pay attention to the left and right sides must be rolled up and pinched.

Pet-name ruby is put into a mold for secondary fermentation for 60 minutes, then put into an oven preheated to 160℃ for baking for 40 minutes, and then taken out for cooling.

Tips:

① When two doughs overlap, do not mix dry powder, otherwise it will affect the finished product.

② Although the heart-shaped mold is lovely, you can't see the final fermentation without the cover. You can observe from the upper and lower holes. If the dough can be seen in the upper and lower holes, the fermentation is completed and baking can begin.
