Besides the tea factory, the only place in Yuhuatai Scenic Area that knows Yuhua tea is Sun Yat-sen Mausoleum Tea Factory. Sun Yat-sen Mausoleum Tea Factory and Yuhuatai Tea Factory were both developed in 1958, and 1959 produced pine needle-shaped Yuhua tea. Handmade tea in these two old factories is very scarce, and a small amount of handmade tea before the Ming Dynasty can be sold for five or six yuan a catty.

On this day, the young director of Sun Yat-sen Mausoleum Tea Farm arranged for tea drinkers to stir-fry pine needle-shaped new tea in front of the traditional plum blossom stove. Since April 1959, this kind of tea is as beautiful as pine needles.

In the evening, fresh leaves have been picked, and everyone queues up to weigh and count. Tea pickers come from Anhui, Jiangxi and northern Jiangsu. Because the picking standard is very strict, I bring one or two Jin of fresh leaves a day. After moderate drying, the tea leaves are green, and a pot of tea is fried by hand for more than an hour, which is the amount of two. Sun Yat-sen Mausoleum Tea Factory has a long-term brand, with little output, and tea is basically not sold.

Visit two tea factories, both of which still retain traditional handicrafts. The first step of traditional manual processing technology of yuhua tea lies in enzyme fixation. The enzyme was immobilized in a pot with a diameter of about 60cm and the temperature was 120~ 140. The principle that high temperature kills green leaves, young leaves and old leaves should be mastered. When the leaves become soft and fragrant, this process lasts for 5 or 6 minutes. Then roll out of the pot for easy setting. For convenience, a lot of green tea often rolls in the pot. If the fruit sticks to the pot, it will affect the quality. After taking out of the pot, Yuhuacha is kneaded on a special bamboo curtain, and crushed for 3 or 4 times during kneading, which can be completed in less than 10 minute.

This is an important process of making yuhua tea. Hand twisting is the key technology to form shapes. On the basis of twisting into strips, it is twisted into tight, round, straight and smooth pine needles. Add a little Chinese tallow oil to a hot pot at about 80℃, and the amount of leaves is about seven or two. First turn it over and shake it, straighten the tea and roll it gently in your hand. Later, lower the temperature of the pot, stretch your fingers, put your hands together and roll the leaves in one direction. After about 20 minutes, turn them into braces.

The so-called stretching, rubbing hands and foaming at the mouth is a very boring craft. Nanjing Yuhuacha pays attention to the tight, thin, round and straight shape, and this process is not sloppy at all. In the S Mausoleum of Zhongshan Tea Factory, I saw that the old aunt who had worked in the tea factory for more than 30 years was covered with tea, and her movements were skillful and light. After the pot is slightly warm, grab the leaves and stir fry back and forth along the pot wall, straighten the tea strips, rub them tightly and round them. This step takes more than ten minutes, and when it is 90% dry, the pot will stand cold, which is coarse tea. The next step is slicing, grinding, grading and drying like many other green teas.

Near the Sun Yat-sen Mausoleum Tea Factory are tea gardens, mostly under dense forests. There are Mi Tuo, Jiukeng, Fuding Dabai, Longjing Nagano and No.43. In the evening, the sun shines through the leaves in the forest. There is also an old tea garden here, which is said to have been planted by Song Meiling himself and is still sprouting today. This is a suburb with an altitude of two or three hundred meters. It looks quiet this afternoon.
