(一 ) Infusion of tea and camellia oleifera soup are the unique ways of drinking tea in Enshi

Enshi area has many mountains, and the temperature in the high mountain areas is relatively low, so people are used to sitting around the firepit and chatting in their spare time. Over time, It is customary to make tea in an earthen clay pot on the fire pit. The tea leaves are roasted in the clay pot until the tea leaves are burnt but not mushy and the aroma overflows. When the tea leaves are burnt and the aroma overflows, boiling water is used to brew it. This is Enshi Tujia irrigation tea. Sometimes Ginger slices will also be added to brew together to make ginger tea, which has the effect of resisting wind and cold. The people of Enshi are honest and hospitable. If there are distinguished guests coming, they will definitely welcome them with tea. The tea here is Camellia oleifera soup. The Camellia oleifera soup is simple to make and is in the pot. Heat the oil, fry the tea until it becomes charred, add water to boil, add salt and pre-fried soybeans, dried tofu, peanuts and other accessories. The ancestors of the Enshi people mostly engaged in fishing, hunting and farming, so they drank oil tea soup after farming. It has the effect of refreshing the mind, quenching thirst and satisfying hunger.

The Bai people of Yunnan have three-course tea when entertaining distinguished guests, and Enshi Tu The family has four courses of tea.

The first course is called "White Crane Tea", that is, when a distinguished guest comes to the door, tea is made from the well water of the local Baihe Well to welcome the guest and wash away the dust.

The second method is called "pao catechu". This tea is brewed with boiling water instead of tea leaves but "paoer". "paoer" is made by steaming and drying glutinous rice to make "yin rice", which is then fried. The "Glutinous Rice Soup" is made. Glutinous rice is a rare thing in the Enshi Mountains, and using rare things to entertain distinguished guests can better reflect the Tujia people's hospitality.

The third course is "Oleifera Soup", which is usually reserved for distinguished guests. When the guests arrive, the Enshi Tujia people will entertain them with a big banquet, but it takes a long time to prepare the banquet. They are worried that the guests will be hungry, so they serve a bowl of camellia soup to cushion their stomachs before the official meal, which the Tujia people call "snacks."
