Using fine sand as the main material to make pig suet, peeling off the outer film of suet, thinning it with a knife and cutting it into rectangular blocks; Then smooth the oil, put a little finger-thick fine sand in the middle, roll it into square strips, cut it into small pieces, knead it with your hands, take the egg white, put it in a soup bowl and beat it with chopsticks until white fine foam appears, then add dry starch and mix well to make a paste. This is Xian Yi for all ages. Making fresh meat and glutinous rice is the main method. Cut lean meat and fat meat into minced meat according to the ratio of 4: 1, then wash glutinous rice, soak it in warm water for 3 hours, then take it out and drain it, and steam half of it in a cage. Then, add a little water to steamed glutinous rice, minced meat, monosodium glutamate, refined salt, green onions, Jiang Mo, wine and wet starch, mix well together and hold it in your hand until it is slightly smaller than table tennis.

This kind of duck is tender and crisp, which is the best raw material for processing smoked duck.
