Oh my god, Chaozhou is so delicious, right?

Some time ago, my friends who were traveling together went out in a group, and the destination was Chaozhou. After all, everyone is a foodie, and if you can go to a place just for food, we were the first What comes to mind is Chaoshan.

Chaoshan was called Chaozhou in ancient times, and now it includes the four cities of Shantou, Chaozhou, Jieyang, and Shanwei. Because of the busy schedule, I only went to Chaozhou this time, but I believe there will be a second and third time in the near future. This is my trip to Chaoshan because it is so delicious.

Because it is not far from Fujian, the food culture of Chaozhou has many similarities with that of southern Fujian. Remember what I said, the places where the two provinces meet are basically delicious.

In Chaozhou, five meals a day is the norm. Gaining weight is of course inevitable, but the joy of being a foodie is also real. Today I’m going to report what we ate in those days. I’ll also tell you about the mistakes that were made, just to give everyone a heads up.

It is said that the best plan for the day lies in the morning. I was not willing to sleep in during the few days in Chaozhou. After all, one meal is missing and every meal is worth cherishing.

Haiyang rice rolls

Having come to Guangdong, I always feel like something is missing if I don’t eat rice rolls. There are many rice roll shops in the streets of Chaozhou. Unlike Guangzhou rice rolls, which are often topped with sweet soy sauce, the final sauce for Chaozhou rice rolls is usually braised gravy and sesame sauce, and occasionally preserved vegetables or garlic oil is added for seasoning.

After trying a few, I found that either the seasoning was not enough or the oyster sauce smell was too strong. The one I recommend is Haiyang rice rolls, a time-honored Chaozhou brand, and the seasoning is just right. The signature Chinese Cabbage and Beef Sun-cooked Eggs, the cabbage is sweet, the beef is fresh, and the color is excellent. It is highly recommended.

If you are not used to the taste of sesame sauce, you can choose braised rice rolls. I asked local friends about it and found out that there is an unknown shop that does very well. It is located next to the old cinema in Chaozhou. If you want to eat it, You might as well make a special trip there.

Kui Yuan Laoer's Special Kueh Juice

Chaoshan people are famous for their love for eating Kueh, and there are countless types of Kueh, among which Kueh Juice is the most suitable to eat in the morning. The method of making kueh juice is to roast the rice paste first and then cut it into white triangular rice slices, and then pour it with various braised flavors such as large intestine, pork, oil and tofu. It is a bit like a combination of Chaoshan kuey teow and Fujian pot edge paste.

Kui Yuan Lao Er’s Special Kueh Jue has been open in Chaozhou for some years. It has maintained a good reputation over the years. The owner is very recognizable in his white old man’s vest. The store looks casual, but the items made are not sloppy at all. Otherwise, how could it have remained standing in a place like Chaozhou for many years.

@ bread will always be available It blends well and is worth a try as a heart-warming and stomach-warming bowl in the morning.

Hanshanglou

If you want to have some authentic Cantonese morning tea, Hanshanglou is the first place to recommend. The store is located in Fenghuangzhou. In the park, although the place is quite remote, the business is very good, and it is almost full by 9 o'clock in the morning.

The place for morning tea is on the second floor. Because it faces the river, the view from the window is very good. The environment is good and the price is affordable. Everyone in the group was very satisfied with the meal.

The advantage of having so many people is that you can basically order all the common items on the morning tea menu, such as shrimp dumplings, rice rolls, siomai, chicken feet, and spareribs. You can pick your favorites. That's it.

Chaoshan people pursue the ultimate freshness in their food, and one of the typical representatives is beef hot pot. There is a saying that is true. When hotpots everywhere are studying soup bases, Chaoshan beef hotpot conquers the world with a pot of clear soup.

Guantang Brothers Beef Hotpot

In Chaozhou, the best time to eat beef hotpot is in the afternoon or evening, because the beef you eat then is freshly delivered from the local slaughterhouse. The taste is also the best. Of course, being as persistent as we are, we took a taxi directly to Guantang to eat. There was a slaughterhouse right next to it, and the beef was very fresh.

It really answers the saying "The aroma of wine is not afraid of deep alleys". Although Guantang is far away from the urban area of ??Chaozhou (about half an hour's drive), every beef hotpot restaurant is very lively. With this brother's beef hotpot For example, we arrived not too late. Although the store was large, the outdoor seats were basically full, and there were many tour buses parked at the door.

The food is served very quickly, but the speed at which a group of people clear the dishes is not bad. Each plate of meat is poured down and rinsed for ten seconds. As soon as it comes out of the pot, a few pairs of chopsticks are sold out. It is so delicious that it is basically unnecessary. To describe in depth, the empty disks that are beaten one by one are the best witnesses.

Not only is the meat good, but the free cabbage is also very crisp and refreshing. I shamelessly asked the waiter to add several more plates.

The most surprising thing is that after the checkout, 8 people only ate more than 600. This price includes wine and soda.

Laoji Beef

If you don’t want to go to Guantang, there are many well-known hotpot restaurants in Chaozhou City. Laoji and Abin are the most famous. There are more tourists who go to Abin to eat, while Laoji Ji is a beef hotpot restaurant that locals often visit, and it has good reviews in all aspects.

The soup base uses bitter melon and white radish clear soup, which retains the original Chaoshan flavor, and the texture of the beef is not inferior to that of Guantang. The biggest feeling I had after eating beef hotpot in Chaoshan was that the food I had eaten elsewhere might have been fake.

< p> Xinji Shacha Beef Hot Pot

Shacha is a very popular seasoning in Chaozhou cuisine. It is modified from the traditional Indonesian sauce satay and is often used as a dipping sauce in Chaozhou. Many people don’t know What’s more, sand tea can also be used as the base of hot pot. If you are used to the taste of clear soup, you might as well come to Xinji to try the special sand tea beef hot pot.

The door opened at four o'clock in the afternoon, and it didn't take long for people to come one after another. The two-pot combination of sand tea and clear soup is the most popular. The sand tea pot is used to cook beef, which is particularly satisfying. Not only can the base of the pot be mixed in two portions, but the meat can also be mixed in half portions, so that even if there are few people, you can taste more.

Whether it is the bottom of the pot or the shacha sauce used as a dipping sauce, the proprietress made it herself and put a lot of effort into it.

Although the Chaoshan area is not as rich in products as the Guangfu area, it is closer to the sea. Fish, shrimps, crabs and shellfish are frequent guests on the dining table. There is a proverb in Chaozhou: "One fresh, two fat and three at the same time." , talking about local seafood. Let’s start with the two most unmissable delicacies in Chaozhou – raw fish and pickled raw fish.

Guantang Original Yusheng

The most famous restaurant in Chaozhou for eating Yusheng is Guantang Original Yusheng. A special feature of Chaozhou cuisine is that one dish is paired with a fixed dipping sauce, such as beef hotpot with sand tea, and fish and shrimp dishes also have fixed dipping sauces.

Add shredded ginger, raw onions, coriander, a little special soybean paste and sesame oil, mix well with the fish, and take a bite, filling your mouth with a rich taste. This way of eating actually existed before the Tang Dynasty. The 鍍 in the idiom "金鑑玉鍍" refers to raw fish, and the 鑑 refers to side dishes such as shredded ginger.

It is more recommended to dip the shrimps in soy sauce and mustard, just like eating sashimi on a regular basis. I was a little resistant at first because I was afraid of the fishy smell, but when I entered it, I found that it was not at all, it was sweet and chewy, and I stopped at all. Not coming down.

In addition, in addition to fish and shrimp, this restaurant also makes delicious braised goose, which is really surprising.

Round egg wine ingredients

Chaoshan people pursue the original taste of seafood, and the dazzling variety of raw pickled seafood is the representative one. People in Jianghu call it Chaoshan poison. Pickled blood clams, pickled shrimps, pickled crabs, pickled shrimps...it's a perfect pairing with wine, and it's not burdensome to use it as a late-night snack.

Yuan Egg Wine is a small shop that I frequent for several days in a row. The owner and his wife are both from Shantou. The shop was originally opened in Shantou. Because their daughter went to school, the family came to Chaozhou, so they also brought the shop to Chaozhou. The small shop opened here together.

Seafood in coastal areas is relatively less valuable, and the price is very affordable. A meal like this will cost less than 200 yuan.

Before I left, I added the proprietress’s WeChat account and planned to do a group shopping trip next time.

Ruiji Casserole Porridge

A friend who has lived in Guangdong for many years told me that you must have a seafood casserole porridge when you go to Chaozhou. I asked which restaurant I recommend the most. I said Ruiji is good, and the environment and service can be said to be good. It’s basically not available, but for the signature casserole porridge, I can still give it full marks.

The signature shrimp and crab porridge is a must-try. It took a long time to wait, but there are so many ingredients and the taste is very fresh. I can’t stop eating bowl after bowl. I suggest you eat it if you want to. one time.

The raw pickled crab is also very good. It is freshly taken out of the freezer and still has ice particles. The crab paste is very plump and it is delicious when dipped in the special sauce.

Because the menu is relatively simple and there are not many choices besides porridge, I ordered another braised goose, but the taste was not as good as that of the Yusheng restaurant, so I don’t recommend it very much. Off-topic: Fei Jie Bai Porridge outside the city is also a famous place for drinking night porridge. However, my stomach can’t hold it anymore, so I plan to fight again next time.

Nanmiao Tea House

For Chaoshan people, they would rather live without rice than tea. Drinking tea has become an indispensable part of life.

The small Chaozhou-style "Four Points of Gold" old house where Nam Miu Tea House is located has a history of more than a hundred years. The owner restored it to the original and transformed it into the tea house today.

It is not far from Pai Fang Street. If you are tired of shopping, you can come here to sit and taste Chaozhou Gongfu tea.

The teahouse in the small courtyard even uses a charcoal-burning red clay stove for boiling water, which has a unique flavor. There are several clusters of bamboo and green plants planted beside the wall, which is simple and elegant.

Qianli Tea House, which is close to the ancient city, is also highly recommended by tea lovers. Due to time constraints, I couldn’t go there, so I recommend it to everyone.

Kick Peach Coffee

Kick Peach Coffee is probably the most "Internet-famous" cafe in Chaozhou. "Kick Peach" is Chaoshan dialect. When translated, it means going outside to have fun. The atmosphere of the entire cafe Just like the name, it's quite fun.

The quality of the coffee is okay. Except for a certain lady who accidentally ordered a cup of Danconong American style, the other cups of basic coffee are pretty good. The most important thing is that the packaging design is cute and consistent. A check-in artifact that makes tea look delicious.

The environment is also very good. There is a small rooftop on the second floor. If it were not for eating at several restaurants, I could probably sit here for most of the day.

Magusi Baking

I knew this store purely by chance. When we were in Chaozhou, a local friend brought a few bags of his mochi. Although we were already full at that time, these days The bag of mochi was still swept away. It is no exaggeration to say that it is the best I have eaten in recent years. Personally, I prefer the matcha flavor and the original flavor. The ingredients are delicious.

The store is in a small alley not far from the ancient city. When you smell the fragrance, it is almost there. It is best to call in advance to make a reservation and make an appointment with the boss to pick it up. After all, you will have to wait for a long time on site. . Because it was so delicious, I bought a few bags before leaving and took them on the plane.

Ancient method Desserts

Speaking of desserts, I highly recommend this ancient dessert on Kaiyuan Road. We also tried the famous Hu Rongquan Dessert. No matter how we ate it, we found it too sweet, so let’s give it a try.

The signature duck mother twist of the ancient dessert is a Chaozhou specialty. It refers to the glutinous rice balls shaped like duck eggs. The fillings are divided into peanuts and sesame. You can add your own ingredients such as white fungus, red dates and red beans. It is soft and glutinous. The sweetness is also controlled just right.

Yangzhi Manlu is an authentic Laoguang flavor, and the ingredients used are very conscientious at 15 yuan a serving.

A variety of fresh fruits mixed with smoothies, yogurt or lactic acid bacteria to make juice ice. It is also one of the must-try delicacies in Chaozhou. It is made to order. , authentic.

@

The most famous one is probably Huayi. I often see a long queue when passing by. After dinner, I can have a glass of juice ice while walking around in flip-flops. Don’t be too comfortable with the combinations of Amway Avocado + Custard Yogurt and Strawberry + Yakult.

Yushi Milk Ice

This milk ice restaurant has very good reviews, and it is not far from Pai Fang Street, so I went to eat it on the last night while strolling around. There are many places and it is quite lively, three people I ordered two portions of ice and the measurements were just right.

The fruits used in the milk ice are pretty good. The sea salt milk cap has a surprising taste. Friends who love ice can try it. There is a surprise at the bottom.

Licorice fruit

The licorice fruit in Chaozhou is similar to the sweet plum fruit in Fujian. The difference is that one is drizzled with licorice juice and the other is sprinkled with sour plum powder. There is no need to recommend this one in particular. You can find it anywhere on the roadside and it looks fresh and delicious. It’s great whether it’s for appetizing or digesting.

You can choose your own fruits, and the pricing method is by weighing. The most recommended ones are lotus, carambola, green mango, sweet mango, and peach. The crispy texture paired with licorice juice is a must-have. It is a new type of fruit. The way it is opened, it may be that fruits cut by others are always particularly delicious.

The above is almost the food record of this trip to Chaozhou. If you want to eat all the authentic Chaozhou snacks, you don’t need to take the main road of Paifang Street. The food is most popular in the alleys where locals gather.

Highly recommend West Mall Road, Wai Kee’s glutinous rice pork intestines and Yong Kee Snacks’ various kinds of rice cakes, as well as various stalls that appear from time to time. You won’t go wrong if you go to a crowded place and queue up. Eating while walking saves time and effort.

Another suggestion is that it is best to go with a few more people, or stay for a few more days, otherwise you will not be able to eat at all.

Generally speaking, Chaozhou is a place with a slow pace of life. It is suitable for eating and drinking aimlessly. When you are tired, you can find a teahouse to sit and drink tea. If you haven’t decided where to go on New Year’s Day or Chinese New Year, This would be a good choice, after all, the winter in Guangdong is quite comfortable.
