Xingyi Ji Shu Bar Noodles is the main product of an old-fashioned bar noodle shop in Xingyi City, Southwest Guizhou Province, and it is a derivative of the comprehensive method of pressing, pulling and cutting noodles developed by Shu ancestors according to the three traditional techniques of handmade noodles in China.
