Oyster is a kind of shellfish with high economic and nutritional value. The soft (meat) of fresh oyster contains protein 4.5% ~ 4.7%, fat 7% ~ 10%, glycogen 19% ~ 38%, B vitamins and 18 amino acids. Oysters are shellfish that can be eaten raw. Rushan has a saying that oysters are eaten raw and shrimps are eaten alive since ancient times. Coastal fishermen often pry open oyster shells on rocks and eat oyster meat raw.

Oysters are also one of the most resistant aquatic animals. In the past 200 million years, the changing environment in intertidal zone has exercised the strong resistance of oysters to temperature, salinity, common pathogens in the open air and sea. When the water comes out at low tide, it can tolerate the hot and dry weather in summer and adapt to the freezing weather in winter successfully, and can survive without water for 1 ~ 2 weeks or even 1 month.
