Sun is the only academician in the field of food science in China who focuses on the study of spices, and is an expert in the chemistry of spices and edible flavors. In terms of meat flavor spices and meat flavor essence, many technical problems have been overcome.

In the 1980s, the production technology of sulfur-containing spices in China was very backward. Many key spices could not be produced by themselves, but were artificially controlled. Another research achievement of Sun is the manufacturing technology of natural meat flavor.

The meat flavor abroad is generally made from hydrolyzed vegetable protein and yeast extract through seasoning or thermal reaction. Although the product is rich in flavor, it lacks pure meat flavor. According to the formation mechanism of meat flavor, Sun and other researchers put forward a new concept of making China characteristic meat flavor with the same aroma and ingredients. Following this concept, he developed the manufacturing technology of natural meat flavor essence with meat and bone of livestock and poultry as the main raw materials, and the core technology obtained four authorized invention patents.

As the first finisher, Sun won the second prize of National Science and Technology Progress with 1999, 2000 and 20 16, the second prize of National Technology Invention Award in 2005, and the science and technology innovation award in 20 19.

For these achievements of sun, on the one hand, it is his pursuit of science and technology; On the other hand, it is his responsibility and mission. "At that time, I had two ideas when I went to college: I didn't want to be a teacher anymore, and I didn't want to engage in chemistry anymore." But in the end, he became a teacher and started fine chemical industry. He has overcome many technical problems such as meat flavor spices and meat flavor essence, and his research results have filled more than 20 domestic gaps.

Sun was elected as an academician of China Academy of Engineering in 2009 due to his outstanding contribution in the field of food flavors and fragrances. Today, he is honored as a "spice academician" by his peers.

Talking about the college entrance examination: I left the countryside and went to Beijing, achieving a goal in my life.

Beijing News: When did you take the college entrance examination? Did the process go smoothly at that time?

Sun: The experience of taking the college entrance examination is full of twists and turns. I took the exam four times. 1977, 16 years old graduated from high school and returned to the village union middle school as a middle school teacher. There was just a shortage of a physics teacher at that time. The educated youth in Wanxian County, Sichuan Province, wanted to leave as a chemistry teacher, and she couldn't leave without a teacher, so I taught physics and chemistry. At that time, teachers didn't have training, so they picked up textbooks and went to the podium. Now they are learning to sell them.

1The national college entrance examination resumed at the end of 977, and I wanted to register at that time. The headmaster supports our college entrance examination, but he also "beats" me in advance: the college entrance examination is ok, but it can't delay students' class. So although I applied for the college entrance examination, I devoted myself to teaching, attending classes during the day, preparing lessons at night, correcting homework, and engraving wax paper mimeographed materials and test papers at night. Due to lack of preparation, I failed the first college entrance examination in Sun Shan.

When I transferred to secondary school for the second time, I thought about leaving the countryside. I was admitted to a technical secondary school and went to the county for a physical examination. I failed because I was too nervous and my blood pressure was high. I was admitted to the technical secondary school for the third time, and my blood pressure was stuck during the physical examination. In fact, there is nothing wrong with my blood pressure, just a conditioned reflex. I was scared during the physical examination.

I thought at that time that if I continued to be a private teacher, it would be no problem to become a full-time teacher in the future, but I could compete with the old private teachers in the school at such a young age. Many of them are my junior high school and primary school teachers, and I still have to continue the college entrance examination. From June 1979 to June 10, I seized an opportunity and entered the training class organized by the county teachers' further education school. When I was preparing for the fourth exam, I was still struggling whether to take the technical secondary school or the university. My physics teacher suggested that I take the college exam. Graduated from Fudan University before the Cultural Revolution. The reason he said at that time was simple: "Compared with technical secondary schools, there is a two-level wage difference after graduation. I can't catch up in this life. "

Hearing this, I decided to go to college. Because I prepared for the college entrance examination nearly 10 months in advance, I learned more comprehensively in the further education school; In those years, physical chemistry teachers were not abandoned. 1980 college entrance examination, full marks are 100. I got 98 and 94 respectively, with a total score of 4 13.5, which is much higher than the key line of Shandong's 360 points. I was admitted to Beijing Institute of Light Industry.

I not only left the countryside, but also went to the capital Beijing, which is regarded as a goal of my life.

Beijing News: Remember how to prepare for the college entrance examination?

At that time, in rural middle schools, teachers' offices were divided into principal's offices and wing rooms. Besides preparing lessons, we young teachers will go to the wing to study. The conditions of teachers' further education schools are also difficult. We borrowed a classroom from a middle school near the county seat, lived in a house in the village, made a floor, covered with adobe, covered with some sand, covered with wheat straw, and then covered with straw mats. As long as it's sunny, you have to bask in the bask in the quilt and the mattress, otherwise you won't be able to sleep because of the high tide.

But everyone's enthusiasm is still very high. The school is paramilitary, running at 6 am, studying from morning till night, studying at 9 pm, and the dormitory is turned off 10. Teachers in normal schools are all of high level, and finally catch up with the opportunity of concentrated study. Sun: I have been a junior high school teacher for three years. The only time I left Zhaoyuan was to visit the teaching assistant exhibition at Pinglidian Middle School in Laizhou, which is twenty or thirty kilometers away from our middle school. Ride a bike back and forth that day.

I came to Beijing to go to school, and no one sent me home. I went from Weifang to Weifang. The first time I saw the traffic lights, the first time I got on the train. The route from the station to the school is clearly written in the admission notice: get off at Beijing Station, take the tram 103 to Exhibition Road, and then transfer to bus 10 1 or 335 to Mashenmiao Station. I arrived one day earlier than the reported check-in time, and it was about 6 o'clock in the morning when I arrived at Beijing Railway Station. People are a little at a loss. I take the 103 bus to the exhibition road, and I take the 335 bus to stop. Then get off and sit back to the opposite side, and finally sit at the finish line; I came down and sat back. I finally found a school this time. So I was particularly impressed when I first came to Beijing.

At that time, the school had just resumed reconstruction for one year, which was in the summer vacation. The playground is covered with grass. Many students from the city think the school conditions are too bad, but for me from the countryside, I think it is already very good. Although the dormitory is bunk bed, I finally sleep in the bed instead of sleeping on the floor.

Beijing News: Is there anything that impressed you in college life?

Sun: In the first semester of college, in winter, the school students will take a group photo. It's not nice to take pictures in cotton-padded clothes, so I took off my coat and put it next to it. As a result, the coat was gone as soon as the group photo was over. I was confused at that time. How can we spend this winter without cotton-padded clothes? The next day, the counselor said to me, "Write an application quickly and give you a subsidy of 20 yuan to buy a coat." I didn't expect such a good thing, so I wrote an application and took 20 yuan. I remember I spent 18 yuan on a coat, and there were two yuan left.

I was very moved by this incident and felt the warmth of the school, which is why I didn't want to be a teacher when I went to college, and later chose to stay in school. After work, I never hesitate to help teachers and students with difficulties or donate money to the school foundation. I should be one of the working-class people who donate the most to the school foundation and teachers and students. I think people should be grateful.

Message to college entrance examination students: a hard environment can make a career.

Beijing News: What changes have the university brought to your life?

Sun: As the saying goes, knowledge changes fate. The university let me learn the basic knowledge of science and culture, laid a solid foundation for later scientific research and management, and also increased my knowledge. The school will invite experts to give lectures and hold concerts. Although I didn't know symphony at that time, I would learn to appreciate it.

During my college years, I also learned a lot of skills beyond scientific and cultural knowledge and exercised my will.

I learned to skate and swim. I remember one winter, I went to yuyuantan park for a run in autumn clothes, and I felt "amazing". When I went there, I found someone swimming in winter. I immediately felt very short and wanted to try. I have been swimming at least six times a week since the summer of 1985. In the middle of June of 5438+00, the weather turned cold, and several young colleagues who swam with me "retreated" one after another, and then I was left alone. But I persisted and swam for three years in a row. It takes a lot of courage to swim when it snows and freezes. This test of will has overcome my happiness and enabled me to face up to difficulties, be more frustrated and brave in future scientific research. It was also during the winter swimming that I was admitted to graduate school and embarked on the road of scientific research.

Beijing News: What do you want to say to the students who are about to take the college entrance examination?

Sun: In our generation, people "do what they like". Young people nowadays want to do what they like. This has created conditions for everyone in China's economic and social development, and it is also the happiness of this generation. But each of us should also realize that personal development is always restricted by various conditions, including the stages of self, family and social development. It is certainly a good thing to have ideas, goals and choices, but we must also have the ability to adapt to the environment when objective conditions are not available. This is called survival of the fittest.

We all know that Huangshan has a welcoming pine, which is world-famous. But how bad is the environment for welcoming pine to grow? It grows out of cracks in the rocks at the top of the mountain. I think, if you can choose, it certainly doesn't want to live in a crevice, but if it grows on fertile land, even if it grows into a towering tree, it won't be as world-famous as the welcoming pine.

So in other words, a tough environment can better train people and achieve their career. Although we often say at school that we are not afraid to learn math and physics well and travel around the world, there are many other subjects besides math and physics. No matter what you study, you should study hard, thoroughly and accurately to lay a solid foundation for yourself.
