First of all, rock sugar trotters

Materials:

Pig's trotters, crystal sugar, star anise, pepper, onion, ginger, soy sauce, cooking wine, salt and sesame oil.

Materials:

750 grams of raw trotters

Zanthoxylum bungeanum, dried capsicum, onion, ginger, garlic, sesame, cooking wine, salt, monosodium glutamate, rock sugar, aniseed, cinnamon, fragrant leaves, etc.

Exercise:

1. First, burn the raw pig's trotters on the fire, remove the hair, and then cut them into pieces and fry them in the oil pan until the skin is slightly burnt.

2. Blanch the fried pig's trotters in hot water to remove the burnt smell.

3. Put the rock sugar in the pot and fry it into caramel color for later use.

4. Stir-fry aniseed, fragrant leaves, cinnamon, onion, ginger and garlic in a pot to get fragrance, then add cooking wine and water, and put the cooked trotters in water to cook for about 1 hour. In this process, salt and monosodium glutamate are added, and caramel color is constantly added to the water to color the trotters.

5. Take out the cooked trotters and put them on the plate. Stir-fry pepper and dried red pepper with a little oil until the pepper is slightly yellow, pour it on the trotters and sprinkle some sesame seeds.

Third, braised trotters

Materials:

5. Add a small amount of boiling water until it boils again.

6. Add beer so that the material won't touch the pig's trotters.

7. Add 2 tablespoons of soy sauce and 2 tablespoons of braised soy sauce and mix well. Boil the soup.

8. Turn the casserole to low heat, add the shallots and simmer for 1- 1.5 hours.

9. After the pig's trotters are soft and rotten, open the lid and turn to the fire to collect juice.
