In the history of ancient civilization in China, wine culture was extremely brilliant. Dukang wine is known as the "elder" of the wine forest, a famous historical wine in China and a precious heritage of the Chinese nation. This wine is named after its ancestor Du Kang. For thousands of years, Dukang wine has been widely circulated, known far and near, and praised all over the history books. During the Three Kingdoms period, Cao Cao, Emperor Wu of Wei wrote in a short song: "Be generous, considerate and unforgettable; How to solve your worries? Only Du Kang's eternal swan song. So Dukang wine has a long history. As early as the Three Kingdoms period, it was famous in the government and in China. Really: crown the wine soul of our nation and monopolize the spring of the world!
According to historical data and archaeology, Dukang wine was indeed brewed in Baishui County, Shaanxi Province. The former site of Du Kang Brewery is located in Kangjiawei Village, Dayang Township, Baishui County, Shaanxi Province. The village is surrounded by mountains on three sides, with beautiful scenery, evergreen pine and cypress, a big ditch nearby and crystal clear water. Because Du Kang made wine on this ditch, it was named Du Kang ditch. There is a clear spring at the bottom of the ditch, which gurgles upward from the ground. According to the Qing Dynasty's "Baishui County Records", it is recorded: "The spring is weakly sprayed into winter, flowing for four miles and entering Baishui River. The villagers said that the water still smells of wine. " I still remember: "Du Kang takes this water to make wine", known as Du Kangquan. According to the analysis of relevant scientific research departments, water is neutral, low in hardness, low in calcium, low in impurities, heavy in proportion, high in carbonate, clear and easy to precipitate. Raw water tastes sweet and refreshing, and it is indeed the best spring water for wine making. Making wine with this kind of water is especially smooth and fragrant. A long time ago, people built Du Kang Temple next to Du Kangquan. In the forty-eighth year of Kangxi in Qing Dynasty (1709), it was renovated again. "The villagers go to the temple to worship God and cook every year on the 21st day of the first month." Now an antique pavilion is built above the spring, and running water passes through it. At that time, Du Kang drew sweet and pure spring water here, carefully brewed fine wine, and people drank it, which could moisten the throat and promote fluid production, dispel cold and promote blood circulation, invigorate the spleen and strengthen the stomach, invigorate the spirit and prolong life, so it became famous day by day.
Legend has it that Du Kang made fragrant mash here in a strange way and dedicated it to the Zhou Emperor. After the emperor drank it, he was very happy and named Du Kang "Brewmaster". After thousands of years, people have always respected Du Kang as the originator of wine-making, and built Du Kang temples in various places to worship the "God of Dukang". Until the founding of New China, famous wine workshops such as Kweichow Moutai, Shanxi Fenjiu and Shaanxi Xifeng still followed this custom.
Du Kang is the "ancestor of brewing" in ancient legends of China. Du Kang was born in Kangjiawei, Baishui County, Shaanxi Province and was buried here. According to the Records of Baishui County in Qingganlong, "Du Kang, whose name is Zhongning, is a Kangjiawei person in the county and is good at making wine." He also said, "Du Kang's tomb is fifteen miles west of the county seat, and there is still a trough near the tomb, which is quite cloudy." In addition, the location of Du Kang's tomb is marked on the county map. During the Wanli period of the Ming Dynasty, Du Kang Temple was built in Du Kang Valley. The inscription "The Creation and Repair of Dugong Temple", which was established in the 48th year of Qing Emperor Kangxi, reads: "Dugong is taboo about being born, and the word is better. He was born in Kangjiawei, a county, and he built a temple tomb. He is good at making wine. " In addition, four stone tablets have been found in this county in recent years, all of which record Du Kang's life experience and wine-making achievements. Regarding Du Kang's winemaking, there are references to Du Kang's winemaking in ancient books, such as Shi Ben, Lu Chunqiu, Jiu Shi, Jiu Hao, Jiu Jing, Zhan Guo Ce, Wu Ji Yuan, and China's Dictionary of Names. According to records, Du Kang was once a "shepherd". Once, I abandoned the "leftover porridge in the mulberry cave". "Here we go again. It tastes strange." It was found that it was the aroma of fermented rice in the mulberry hole. "Du Kang tasted the sweetness and knew the secret of brewing." From then on, Du Kang began to make wine. The Book of Poems in the Han Dynasty records: "Yi Di started with wine mash and changed into five flavors. Shaokang (that is, Du Kang) makes wine. " In the Eastern Han Dynasty, Xu Shen said in Shuowen: "In ancient times, Yidi was used as wine mash, which was delicious, so Yidi was used to make wine, and Du Kang was used as wine." Zhang Hua, a native of A Jin, said in the Natural History: "Dukangshan makes wine." In the history of wine, there is such a record: "Du Kang began to make wine." Tao Yuanming wrote in the Preface to Poems on Wine: "Yidi makes wine and Du Kang polishes it." Tang Pirixiu's Poems on the Wine Bed says, "Didi has sound, but Du Kang is empty." Du Fu, a poet sage in the Tang Dynasty, once went to Baishui to go to his uncle Cui Shaofu during the Anshi Rebellion, and wrote many poems, including: "Du Kang tried his best to persuade Zhang Li to get rid of it." Su Dongpo's poem "Abstinence from Alcohol" said: "From now on, there will be no more Du Kang sacrifices." Shi Nianhai, a famous historical geographer in China, wrote an inscription for Du Kang Winery in Baishui County: "Du Kang Holy Land". For thousands of years, Du Kang has been honored as "the originator of brewing" by later generations, and has been circulated among the people to this day.
Dukang Liquor gained a great reputation, and there was an anecdote: "It is said that Du Kang opened a hotel in Baishuikang's house. Liu Ling, a famous scholar among the "Seven Sages of Bamboo Forest" in the Eastern Jin Dynasty, was famous for drinking. One day, Liu Ling passed by and saw a couplet posted on the door of the hotel: "A cup of wine in the mountain, two cups of water at the bottom of the sea, sleeping dragons". Horizontal batch: "Don't get drunk for three years without money". Liu Ling couldn't help laughing when he saw it, thinking, I am a famous Brewmaster, where I have never eaten wine or seen such a compliment. Let me finish your wine and see if you dare to go crazy. Then, Liu Ling walked into the hotel and had a drink with Du Kanggan. Who knows, after three glasses of wine, Liu Ling only felt dizzy. Sure enough, she was drunk and stumbled home, drunk for three years. Three years later, Du Kang went to Liu Ling's house for a drink. The family said that Liu Ling had been dead for three years. When Liu Ling's wife heard that Du Kang had come to beg for a drink, she was angry and resentful. She went to Du Kang and cried that she would sue Du Kang. Du Kang smiled and said, "Liu Ling is not dead, but she is drunk. "When they arrived at the cemetery, they opened the coffin and saw that Liu Ling was drunk and woke up slowly. He opened his eyes, stretched out his arms, yawned a lot, blew out a smell of wine, and proudly said, "Good wine smells good!" " "This is the folk story of' Du Kang getting drunk in Liu Ling'. Up to now, on the other side of Du Kang's tomb in Kangjiawei Village, Dayang Township, Baishui County, there is a stream, which is Liu Ling's tomb, made of stone. The book "Du Kang Made Liu Ling Drunk" handed down from generation to generation wrote: "The best wine in the world is Du Kang, and the biggest drinker is Liu Ling ... After drinking three cups of Dukang, Liu Ling was drunk for three years." Of course, this is an exaggerated folklore. However, Dukang wine does have the reputation of "opening the altar ten miles, three drunken houses next door".
Dukang wine is one of the precious heritages of China. For thousands of years, Du Kang has been regarded as the "ancestor" of China's winemaking, which is immortal, but his winemaking method has long been lost.
In order to explore and inherit the traditional technology of Dukang wine and make the famous historical wines reappear in different ways, 1976, Shaanxi Baishui Du Kang Winery was rebuilt in Du Kang ditch, the brewing place in Du Kang, covering an area of 76 mu. Inspired by the spirit of "Reviving Du Kang, Winning Glory for Our Country", the staff of the winery consulted historical documents, explored the brewing heritage of Du Kang, visited folk brewing families, widely adopted the experience of traditional koji-making, inherited the essence of ancient brewing, went to Xifeng and Luzhou, visited apricot flowers, created a new look in Du Kang, and won the reputation of China famous wine. After repeated research and experiments, we learned from the crisp and sweet Du Kang spring water used for brewing in Du Kang, selected local high-quality barley, wheat and peas to compose music, selected Guanzhong high-quality sorghum as raw materials, fermented in the old mud pond, combined the traditional brewing heritage with modern scientific brewing technology, and finally made it through koji-making, fermentation, pit selection, distillation and blending. Du Kang famous wine, eternal rebirth.
