Lvliang Pasta Culture
As the saying goes, "Food is the most important thing for the people". Shanxi pasta is a unique landscape in people's lives. Our Lvliang pasta is unique in Shanxi pasta with its rich taste and rich local cultural characteristics.
Ancient civilization, barren loess, high mountains and frequent wars. In the process of adapting to and transforming nature, the people of Lvliang have thrived from generation to generation, which is known as the wind of burning millet. Diligence, frugality, intelligence, hard life and optimistic personality enable Luliang people to create colorful pasta making techniques and unique folk culture by using natural grains. Lvliang pasta is not only the daily life of Luliang people, but also one of the essential foods for special festivals such as festivals, weddings and funerals, worship of gods and exorcism, and it is also the highlight of local snacks, Lvliang.
First, pasta in the daily diet
According to the different processing methods of pasta, it can be divided into four categories:
1, steamed. Most of them are white flour, such as steamed cakes, steamed buns, steamed dumplings, steamed bread and flower rolls. Steamed miscellaneous grains include corn flour, sorghum flour fish, buckwheat flour, oat flour horn, red flour horn, rice flour steamed bread, gold and silver curly cake, Helao glutinous rice cake, yellow rice steamed bread and so on. Steamed bread and steamed bread are the most common. Steamed bread is a kind of civilian food, which is made of corn flour and soybean flour. It is shaped like a small steeple with eyes at the bottom, and some of them are also made. Steamed bread is also called steamed bread, paper and steamed buns. According to the hardness of dough, the food fermented and steamed with flour can be divided into steamed bread and steamed bread. According to its shape, it can be divided into circle and rectangle. Lvliang's steamed buns are mostly solid, while Jiangnan's steamed buns are mostly stuffed. This ancient fermented dough steamed food can be compared with western bread.
2. Cook spaghetti. Weigh a few Jin of flour, add water and stir, then chuai chuai, knead, cut, pull, rub and stir, and make all kinds of pasta. Long-faced round cakes, this is a change; Then add ingredients and change the technique, just like "Wuji" and "Taiji", so "two images", "four instruments" and "sixty-four hexagrams" have changed one after another. As far as noodles are concerned, the thick one is a comfort strip, the thin one is a nest of silk, and the middle one is a curtain rod. Luliang people created extremely rich noodles by pumping, pulling, cutting, cutting, poking, picking, kneading, pressing and sipping. As far as fabrics are concerned, there are spiced noodles, yam noodles, white noodles, red noodles and buckwheat noodles. There are Longxu Noodles, Daoxiao Noodles, Tiaojian, Cat Ear, Fish Leaking, River Fishing, Tiaojian, and Choke a knot in one's heart. Toppings include egg noodles, spinach noodles, minced meat noodles, stewed noodles and meat noodles; On the occasion of pasta, there are longevity noodles, Lamian Noodles noodles, Lamian Noodles noodles and Yangchun noodles. Jiaozi is the most popular in cooking, and its making methods and fillings are varied. Jiaozi is made by hand and rolled with a rolling pin. It is an indispensable hospitality food and symbolizes tolerance, unity and harmony.
3. Bake and brand cakes. Pancake is an ancient and common food, which can be made of white flour, red flour, bean flour and corn flour. When making, thin the noodles into paste, put them on a frying pan and push them evenly, and bake them until the white hair turns yellow. Among them, cornmeal pancakes are made of coarse grains of corn, soaked in water for a day, ground into paste with stones, spread out with a flat spoon of beef tendon, roasted thoroughly and fished out. This kind of pancake is thin and elastic, sweet and delicious, and easy to store.
4. Fried food. There are fried dough sticks, oil cakes, twists, oil cakes and so on. In ancient times, "Fried dough sticks" were called "Fried Gui", and "Gui" meant Qin Gui. It is said that people hate Qin Gui and his wife for framing the famous anti-gold star Yue Fei, so they twisted two dough figurines into a spiral shape and fried them in a frying pan to vent their hatred. Cakes are food for festivals and New Year's Day, and they are not eaten normally. To make a small amount of cakes, just make a nest of cake noodles, steam them, knead them and fry them in different doses. Generally, a large number of cakes are steamed, that is, the noodles are put in a large pot and mixed into pieces. Put the steamer at the bottom of the pot and spread a layer first. When the air comes, sprinkle the noodles while adding fire and steam for about ten minutes to cook the dough. After the dough came out, the atmosphere was tense. You must dip your hands in cold water very quickly, insert them into sticky and hot cakes at a very fast speed, drag one piece down into a big box with water, dip it again, knead it into smooth dough, squeeze it into a preparation, and wrap it with brown sugar, red dates and so on. Fry in a frying pan. Made an oil cake with a crisp outside and a soft inside. This way of eating is mostly in Zhongyang, and Wotou is mostly in Pingchuan area.
Second, the pasta in the custom of weddings and funerals.
Funeral: after death, people should celebrate the seventh day of fasting, and recommend fasting once every seven days, seven times. As the saying goes, "the first seven steamed buns, the second seven cakes, the third seven offering meat and fire, the fourth seven taking off, the fifth and seventh corners, the sixth seven offering cakes, and the seventh seven offering nothing." After 7749 days, you can turn over and die, thinking that you are dead and seeking fate. Taking seven days as a cycle, you can't change your fate once, and you won't be reincarnated until 777. Generally, relatives and friends give 12 or 15 steamed buns, and steamed 10 steamed buns with 10 Jin flour in Jiaocheng, which is called "fake three sacrifices".
During the engagement season, we in Lvliang usually eat jiaozi to express our blessing to the couple. This statement originated from the practice in jiaozi, where the edges of jiaozi are close together, indicating that newlyweds are more in love and interdependent. When we get married, we usually don't eat steamed bread, which is unlucky. Eat more jiaozi when you leave Jiaocheng. Ten days before marriage, I was also very particular about food. The noodles eaten on the fourth day are called Changfu noodles. As the saying goes, "son-in-law meets relatives and friends on the third day, eats preserved noodles on the fourth day, returns to her family on the fifth day, and eats steamed rice on the sixth day. She is a hundred-year-old couple, seven jiaozi, eight torches, nine steamed buns and ten cakes.
Third, the birthday etiquette of spaghetti:
For the elderly's birthday, the hospitality menu depends on the whole family, but you must eat oil cakes, peaches and noodles. A noodle can be as long as 5 meters, which is just a bowl of longevity noodles. A noodle is like a silver chain, full of twists and turns, symbolizing the road of life. If a face is 100 meter long, it means a hundred years of life and peace.
Four, pasta in the Spring Festival:
Every New Year, Lvliang people steam rolls, jujube hill and jujube flavor, all of which are fermented and steamed with white flour. Rolling noodles means rolling noodles into strips, then printing a concave surface on them with chopsticks or other thin sticks, then rolling hands at both ends back like rabbit ears, and then inserting dates into the concave surface to send new year's greetings to children, also called "rolling noodles". Jujube hill, on the other hand, made noodles into human figures, and then placed them at the lower right end of the kang, or other important places of respect, when the gods offered sacrifices. On the other hand, the noodles are rolled into pancakes with jujube flavor, and then the dates are put on at least three layers. After steaming, they can be eaten. They are placed on both sides of jujube hill to exorcise ghosts and pray for blessings.
Pasta is also mostly used in Tomb-Sweeping Day. Before the arrival of Tomb-Sweeping Day, housewives would steam Yan Yan for their children, that is, make fermented noodles look like many animals, and then steam them out to welcome the spring. In Tomb-Sweeping Day, people will also make "Zitui", that is, very small steamed buns as sacrifices to express their condolences and respect for the dead, or pray that their souls will bless the world peace in heaven.
Five, pasta snacks:
Pasta can really become a "bright spot" in flavor snacks, such as; Fenyang stone cake, crispy meat pie, Linxian oil hoe cake, Liulin bowl ball, sesame seed cake, Shilou fried noodles, Jiaocheng spiced seasoning noodles, Wenshuibao county Chinese meat, etc. I can't count it. You will have a good time in those places!
There are many kinds of pasta in Lvliang, which are not only delicious, but also meaningful. It is the carrier and symbol of our living culture and local characteristics in Lvliang, and it is the wealth of Lvliang people and even China people. We should protect and keep pace with the times.
