How cold is winter in Russia?

At the end of last year, Alec Luhn, an American correspondent in Russia, shared a photo of eating a bowl of noodles and an egg outdoors. The food actually froze in mid-air and stood up by itself!

The photo was taken in Novosibirsk, which is relatively south on the map of Russia, but the temperature still drops to -40℃ in winter.
