Wenchang chicken

Wenchang chicken is the most famous traditional dish of Han nationality in Hainan, and it is called "the first of the four famous traditional dishes in Hainan", so it is named because it is produced in Wenchang. It is one of the best edible chicken breeds in China, and it is known as "no Wenchang chicken, no dinner" in Hainan.

Wenchang chicken is mainly white-cut chicken, including coconut milk preserved chicken, crispy chicken and fried chicken. The processing method and seasoning of white cutting are very unique. It is said that Wenchang Chicken first came from Tianci Village, Tanniu Town, where banyan trees abound. Domestic chickens peck at tree seeds, the skin is yellow and crisp, the meat is tender and beautiful, and the bones are crisp and fresh. The eating method is mainly white-cut, with unique condiments, which makes people feast their eyes. Rice cooked with chicken oil and chicken soup is commonly known as "chicken rice".

Produced in Jinshan Town, Wenchang County, it is characterized by crispy and delicious meat, sweet and delicious. Jinshan beef tenderloin pays attention to the production process and chooses fat beef. Marinate the meat with seasoning for a certain period of time, put it in a pot, cook it and dry it. After drying, put it in a pot for replay and bake it with fire. Jinshan beef jerky made by this method is particularly delicious, and it tastes different when dipped in vinegar and pepper.

Jinshan beef jerky, as a favorite instant specialty of overseas Chinese in Hainan, is mainly exported to Southeast Asian countries and regions. Many people go abroad to visit relatives, and always buy a few catties to take out, so that relatives living abroad can taste the taste of their hometown and give them as precious gifts to relatives and friends. When overseas Chinese come back, they always eat Jinshan beef jerky, a famous product in their hometown, which is delicious for the villagers at the banquet.

Wenchang baoluofen

Paul powder is a kind of rice flour, which is slightly thicker than Hainan powder and is called "coarse powder soup" in northern Hainan. However, because Paul Town in Wenchang County is the most famous one, the name of Paul Powder was opened. Delicious abalone powder is in the soup. There is often a big pot in the powder shop, which is cooked with pig bones or cow bones. When the soup is boiled, the floating foam is continuously removed until the fishy smell of bones is completely oozing out, and then a proper amount of salt and monosodium glutamate are added to make it fresh and tender.

When eating, drain the cooked and cool rice noodles, and then add fried peanuts, fried sesame seeds (ground into powder), fried shredded bamboo shoots, fried sauerkraut, special shredded beef jerky, fried pork, garlic-flavored cooking oil, coriander and chopped green onion one by one. Beat a spoonful of boiling soup and pour it on the flour. Sprinkle a little pepper and serve. I like spicy food, and it tastes better with a little pepper.
