If you want to learn portrait photography, which is better, to be a photography assistant in a studio or a studio?

This is a misunderstanding. Photography assistants can't learn photography skills. If they want to learn something, they are apprentices. . . Apprentices are usually paid little or no wages. . Some small photography shops recruit apprentices, in fact, they want to recruit some cheap assistants to do the work. . . So I can't find a reliable company. Being an apprentice is actually a pit.
